Today is a picture perfect day in NH... 75 sunny and breezy. I'm loving it! The kids and I went blackberry picking this morning, picked tomatoes broccoli and green beans this afternoon. But I was feeling a bit sluggish...
Probably because of two days of pounding a heavy mayo/dressing filled potato salad... So I needed something a bit lighter today with my sandwich for lunch.
Here is a light healthy salad recipe for you.... I'm redeeming the calories my little cupcake and I consumed earlier!
Cucumber Salad(recipe yields one side serving)
1 pickling cucumber or 1/4 of a seedless European cucumber sliced thin
1 tbs diced red onion
4-5 cherry tomatoes
1 tbs of low fat sour cream
1/4 tsp dill weed
1/4-1/2 tsp cider vinegar
pinch of salt
Toss veggies in a bowl and set aside. In a separate bowl whisk sour cream, dill, vinegar and salt together till smooth. Toss over veggies.
