I've made strawberry banana muffins a couple times now ... they are my kids favorite muffin for sure. This muffin is so good and moist, definite banana bread flavor but the added bits of strawberry gives it a nice fresh summer flavor... Then you add on the Brown Butter Cream Cheese Spread OH MAN!
There is nothing better than the toffee flavor added on top of the sweet fruity muffin!
Be honest... it's frosting right?
But I can't call it frosting... or at least my conscious won't let me. Because a muffin is a muffin and not a cupcake... it shouldn't have frosting. At least if its "breakfast."
So lets just pretend.... it's a spread.
I personally love banana bread or banana muffin made with any other fruit combo... or chocolate... or peanut butter... or granola.... or? Pretty much all banana combos are all right by me!
Though I hate bananas raw and plain. Weired right?

Strawberry Banana Muffins
Adapted from Joy The Baker's Brown Butter Strawberry Banana Bread
1 stick of butter melted/browned (careful not burnt butter though.. just golden and nutty smelling)
2 cups all-purpose flour
3/4 cup dark brown sugar
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp nutmeg
1/4 tsp nutmeg
2 large eggs
1 tsp pure vanilla extract
1/4 cup strawberry yogurt (you can also use plain yogurt, or sour cream)
3 mashed bananas
1/2 cup diced strawberries plus 1 strawberry very thinly sliced, for topping
Preheat oven to 350 degrees. Line or butter a 6 jumbo muffin pan.
Melt butter in a saucepan over medium heat until its bubbly, golden brown and smells nutty.
In a large bowl, whisk together flour, sugar, baking soda, salt, nutmeg and cinnamon.
In a separate bowl, mash bananas, whisk in yogurt, eggs, vanilla. When butter has cooled, whisk in the browned butter.
Fold in diced berries.
Fill lined muffin cups top with a strawberry slice.
And bake for about 35 minutes or until a knife is inserted and it comes out clean. Let cool for at least 15 minutes before enjoying!!
Brown Butter Cream Cheese Spread
1 stick of butter browned
1/2 a package of cream cheese (room temp)
1/2-1 cups powdered sugar (this is a preference... depends on how sweet and thick you want to go)
Beat cream cheese till its smooth and creamy with electric mixer. Slowly drizzle in cooled brown butter. Add in sugar one tbs at a time till you reach your desired consistency.
Spread on muffin tops and call it a dessert.... or eat the muffins plain and call it breakfast.
