Apple Blondies---> Happy National Apple Week!


So I've been craving fall flavors hard core this week. Anything from Pumpkin Pie, Apple Crisp, foods slathered in caramel and loaded with cinnamon, nutmeg, cloves, allspice. You name it I want it!

So this morning when I logged onto Facebook, I saw a post from one of my favorite baking sites/stores... King Arthur Flour. It's National Apple Week! Woohoo an excuse to pull out some apple recipes and my fall flavor cravings.

Now one would think National Apple Week would be during apple season right? Maybe September? I'm not done putting my beach chairs and bathing suits away... they are really trying to push us into fall!

Problem... I only have 2 apples in the fruit bowl. No pie for this girl... which is one of my all time favorites.

So I just made this up as I went.... and here is what came out of my kitchen today.



Apple Blondies w/ a Peanut Butter Caramel Drizzle
Adapted from William Sonoma's Brown Sugar Blondies
Ingredients:

1 1/4 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 1/2 sticks unsalted butter, at room temperature
1 cup  packed dark brown sugar
2 eggs
1 tsp. vanilla extract
1/4 tsp cinnamon
1/4 tsp allspice
1-2 apples thinly sliced 

Directions:
Preheat oven to 350.
In a medium bowl mix all of the dry ingredients together. Set aside.
In electric mixer add in brown sugar, and butter. Beat till fluffy. Add in eggs and vanilla. Mix till its Incorporated. Slowly mix in dry ingredients just till combined.
In an 8x8 pan lined with parchment paper or greased. Spread batter evenly and top with apple slices.




 Bake for 35-50 minutes.

For the drizzle... What I did was take 1/3 cup of peanut butter, 2 tbs of brown sugar, 1 tsp of vanilla and 1/3 of a cup of half and half. Whisk together constantly over med low heat till sugar is dissolved  and it starts to resemble caramel. Add in more half & half 1 tbs at time if its too thick.
I just piped it on in a drizzle design.... nothing fancy.



So now that I've fulfilled my craving for the day.

I do still want an apple pie though........
