|White Chocolate Wild Blueberry Oatmeal Cookie Who said cookies couldn't be for breakfast?|
We were thinking about making some muffins or something in the morning for breakfast. But then Owen goes... "MAYBE if we put blueberries in our cookies they'll be healthy!!"

With childhood obesity on the rise its a big concern of my husband and I that our kids eat as healthy as possible eating fresh foods and not processed ones... but with mom being a "bakeaholic" they get their fair share of sweats! The key is... in moderation!
In attempt to educate the boys on diet and exercise we talk about our food while we are cooking it and eating it and involve them in the food preparation as well. They understand where their foods came from how its made, what animals and plants are used. If its something new they ask out of their own curiosity. So they are aware of what is good for them... what nutrients do what for their bodies and so on. My 2 year old will say after eating a bite of meat "I'm heavy strong!" which in his language means "I'm big and and strong" He knows that eating that meat will make him stronger... my oldest will go a step farther and knows that protein in the meat is what helps us build muscles. They often take a bite of dinner then go test out their muscles by trying to lift a chair or some other object larger then their little bodies. If we happen to be eating carbs they test to see how much energy they have gotten and will run down the hall way "Mama am I faster now?" Yes hunny your fast now come sit and finish your potatoes!
But anyways... how can I not try putting blueberries in cookies after a cute request like Owen's haha. He'll get his way.
Owen's White Chocolate Blueberry Oatmeal Cookies
1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 cups rolled oats
1 stick unsalted butter, at room temperature (not to mushy and melted or your cookies will be flat)
1/2 cup lightly packed brown sugar
1/2 cup white sugar
1/4 cup REAL maple syrup
1tsp lemon zest
1tsp lemon zest
1/2 tsp vanilla extract
3/4 cup white chocolate chips
3/4 cup frozen wild blueberries ( I picked fresh berries and froze mine the night before I baked the cookies)
Preheat oven to 350
In a medium bowl, stir the flour, baking powder, baking soda, salt, oats together with a fork.

With electric mixer beat the butter, brown sugar, and white sugar together for 30 seconds until blended.
Beat in the egg until smooth and barely fluffy.
With mixer on med/high, slowly add in the maple syrup, and vanilla until blended.
|And of course we only use 100% Grade A Vermont Maple Syrup from the Browns! If you live in an area where maple is not available or is too pricey try using Pure Honey instead.|
Fold in the white chocolate chips and the frozen blueberries careful not to crush them. The reason I say use frozen berries is that they will hold up to the cookie batter without getting mashed into it.
Drop 1 tbs mounds onto parchment paper lined cookie sheet.
|If you don't own a cookie scooper that measures a tablespoon.... You really should get one!|
Bake for 11-13 minutes till just browned on top. Now if you like a crispy cookie let them cook an extra minute or 2 careful not to burn the bottoms though! Set on rack to cool.
