Watermelon Lemonade

Yes another lemonade recipe... I am addicted to lemonade this pregnancy. I think perhaps because I'm not able to enjoy a nice cold cocktail or other adult beverage after a long hot day. I found myself left with half of a large watermelon that needed to be used up and we couldn't possibly eat it all so I thought this would be something fun to get the kids involved with making.

So here it is... my recipe for Watermelon Lemonade.

Watermelon Lemonade
Adapted from Smitten Kitchen

Half of a watermelon removed from rind
5 lemons juiced (should give you about a cup)
2 cups water
1 cup sugar

You could do this a few different ways.... One you could cube up your melon and toss it in a blender or food processor and puree. Two, you could take a large piece of cheese cloth and squeeze pieces of melon juicing it, leaving the pulpiness behind. OR three.... you could give your 2 and 4 yr olds gallon zip lock bags full of melon and let them squeeze it till there is plenty of juice left behind!

After we were done squeezing our melons (sounds dirty huh? haha) pour whats in the bags through a fine sieve. We were left with almost 4 cups of fresh watermelon juice.

After you get your melon juice, start squeezing your lemons. My 5 lemons gave me 1 cup of juice.

Mix juices together set aside.
On stove top over medium heat stir in water and sugar stirring till sugar is dissolved.
Add to juices.

Stir, chill, serve!
