Its another hot summer day and I'm craving something cold to drink!
I have peaches and plums (using seasonal fruits in everything I make!) Why not do an iced tea?
Because I have little ones who will no doubt want a sip and I'm pregnant I want to cut down on the caffeine so I'll be using half herbal tea in this recipe.
Peach Plum Iced Tea
Ingredients:
3 small-medium peaches sliced and pitted (don't worry about the skins)
3 medium plums sliced and pitted ( I had red... but you use what ever you have)
2 lemons juiced
1/4 cup honey
1/2 cup sugar
7-8 tea bags (I used 4 chamomile tea bags and 3 English)
5 cups of boiling water
1.5 cups water (for peaches)
Directions:
Bring your 5 cups of water to a boil, steep your tea bags for about 5 minutes.
Remove bags set your hot tea aside.
On stove top in a medium pan, add in fruit, lemon juice, honey and water. Bring to a boil then turn heat down to low leaving it to simmer for 10 minutes.
Remove fruit from heat and with a potato masher mash mash mash! Pour tea then juice through a fine sieve to separate juices from pulp and skins.
Stir fruit juice, tea, and 1/2 cup of sugar together in a 1.5-2 qt pitcher.
Refrigerate till its nice and cold. Serve with ice, lemon wedge, and fresh peaches and plum slices.
